INGREDIENTS:

150g cooked chicken
180g Sweet Chilli Infused Beetroot
½ avocado
¼ red onion, finely sliced
4 wholemeal wraps
A handful Fresh & Naked lambs lettuce
Small bunch Coriander leaves
Sweet chilli sauce to taste

Method:

  1. Tear the chicken into pieces, slice the beetroot, slice the avocado and red onion. Put all the ingredients including the lettuce, coriander and sweet chilli sauce into separate bowls. Warm the wraps as per the pack instructions.
  2. Take everything to the table and let everyone build their own wrap. To roll, fold the top and bottom in, then roll up from one side. With the seam downwards, slice diagonally across the middle. This way the filling will stay in the wrap as you eat.

Cook’s Tip 1: Sweet Chilli Infused Beetroot can be purchased from Tesco, M&S, Waitrose and Sainsbury’s, or choose a different flavour from the infused beetroot ready-to-eat range, which is available in major retailers and includes: Spicy Sweetfire Baby Beetroot (Tesco Finest), Sweet Chilli Rosebud Beetroot (M&S), Sweet & Spicy Chilli Beetroot (Waitrose), Juniperberry & Black Pepper Cocktail Beetroot (Sainsbury’s Taste the Difference), Sweetflame Beetroot (Sainsbury’s Taste the Difference), Pomegranate & Cumin Beetroot (Waitrose) and Honey & Ginger Beetroot (ASDA).

Cook’s Tip 2: These wraps are great served with Barbecue Beetroot Relish (pictured). Available from Tesco, this new tasty relish is perfect for adding colour and flavour to a wide variety of food from wraps and sandwiches to barbecued food including burgers, pork chops or halloumi kebabs. It also doubles up as a sweet yet earthy dip, perfect with breadsticks or crisps and can be used as a tasty dressing for salads too. RRP £1.25 for 200g.
